AA Rosette for L’escargot bleu

L'escargot bleu, Edinburgh

Chef Fred Berkmiller has made an award-winning start to 2015, Scotland’s Year of Food & Drink, by securing a prestigious AA Rosette for culinary excellence at his Edinburgh restaurant L’escargot bleu.

“I’m delighted with this award,” said Fred Berkmiller, Chef Proprietor of L’escargot bleu. “This achievement is a true testimony to our fantastic team, who work hard to consistently deliver exceptional fresh, local Scottish produce.

This recognition is a real honour

“This is a really special time to be working in the food industry, especially in Scotland, so to receive this recognition now is a real honour and I couldn’t be happier.”

Of all the restaurants across the UK, approximately 10% are of a standard worthy of one Rosette and above. Simon Numphud, AA Hotel Services Business Manager, commented: “The achievement of a one AA Rosette Award recognises high standards, consistency and precision, serving food prepared with care and with evident selection of fresh, seasonal, quality ingredients.”

Classic provincial French cuisine with the finest Scottish, seasonal produce

Fred opened his first Edinburgh restaurant in 1998 and went on to open L’escargot blanc in Edinburgh’s West End. In 2009, he renovated an old clockmaker’s shop on 56 Broughton Street to open L’escargot bleu with his wife, Betty and both restaurants serve a unique collaboration of classic provincial French cuisine with the finest Scottish, seasonal produce.
